    6 months on, Elderflower & Pear Wine still bitter.

    Here was my recipe; I sweetened to medium dry and put this away. 6 months on it's still pretty bitter. Is it the amount and the nature of elderflowers? I was hoping for aromatic and a light sparkling flavour, but it's pretty green grassy tasting and hard to get through a large glass!
