    all i can say is wow, ythis was my first two can kit abnd is so much better than all the rest i have done mmmmmm, it is also the first kit i have put into a pressure barrel, i primed with 85g of sugag and it has given it the perfect ammount of fizz without being fizzy if you know what i mean...

    Cleaning Manky DJs

    I found that if i added some vinager and rice to the DJ and shake and swirl around for a while it is very affective at getting all the **** off then clean with normal cleaner/steriliser. Hope this helps.

    As I'm new to all this what would be the process of using one of these as I really like the look of these, do the casks make the wine really oaky or not? I would really like some info on this.

    I was just following the instructions that came with the kit as it is my first attempt. I would prob find it a bit of a pain in the backside if I was doing a 30 bottle kit.

    I was a little worried at one point but all seems good now, it's just a matter of time now for it to clear. There is 4.5 liters in there well I think there is, the gravity it has finished on is 994 and I have wired it out at a nice 11.7% or there abouts. I must admit I was pleasantly surprised...

    Good idea, this was after the third rack and after adding the finings I cannot believe there was still so much in suspension.

    thanks for your replys peeps. Well it seems to have dissapeared now and is still clearing do you reckon to would do more good than bad to rack off the wine into a clean DJ for a few days before bottling? here are a couple of pics of the wine so far This is the sediment

    I degassed it over three days and added the Potassium Sorbate and then the isinglass (i think its spelt right???) This was all to the instructions, Im finding it hard to tell if it is clear in the DJ as there is so much so i might take a small ammount and see. :? :wha:

    hello there sorry i havent been on again for a while, Thanks for your replys. On closer inspection the white spots were small clusters of bubbles so i think all is well. i siphoned it to the other DJ the other day on i was very surprised by the taste at this early stage, All i can say is wow...

    I have just noticed some white spots on the top of my cab sav do you think there is anything to worry about? It's a 28 day kit and its now in the second stage of fermentation. Eeek help.

    Hey everyone thanks for all your help on this one. Well i added some yeast and gave it a stir and today there was no movement still so i have bottled it this morning so i have my fingers crossed it will turn out ok, so thanks again. :cheers:

    Well I have had a last ditch attempt at my wheat beer to try and restart fermentation so I hope it will work.
