Not been around for a while as you can probably tell from the topic. I started a brew about 2yrs ago and it's still sat there untouched. Is it best to bin the lot and start again or do you think the blanket of CO2 will have been retained and the brew will be OK?

So I've just done a red wine kit that came with oak chips. Should I loose the chips when transferring from the primary to the secondary or leave them in and loose them when I go from the secondary to the bottles/demijohns?

Probably a strange question but if you bought a lager kit could you turn it into an IPA by just adding less sugar at the secondary fermentation or would it have to be a specific IPA kit? I would think it would just be a very lightly carbonated lager!
