    Bolognese Sauce

It's still in cold storage, still a murky pink colour. I don't think it'll ever become a drinkable wine, but I'm just going to leave it where it is as a reminder to myself not to do something so ridiculously stupid again.

    Observations

I've read other receipes where people have used tinned Lychee and they clear no problem, my experience has been using the carton juice which just didn't clear. I've had very good results from using tinned fruit. It's undoubtedly a messier way than using cartons of juice but it's cheaper and I...

    Observations

I've been doing carton juice and tinned fruit type wines and have noticed certain things and thought I'd share. Obviously these results won't be the same for everyone, but in my house, location of fermentation is consistent, not next to any heat sources etc. Still, I thought it might be...

    Goji and other ideas.

Couple of months outside in the dark has made a world of difference, also decanting into small bottles seemed to have sped up the clearing. It is now a glourious, golden colour. Although the colour is similar to a urine sample, the taste is.... unique. Has a very strong goji taste, after making...

    Bolognese Sauce

I'll post a picture tomorrow, not really much to see it's not cleared much. The colour has just been getting paler so I assume it's clearing slowly. Not tasted it. Sorry chaps, just took a load of pictures and I've just discovered my camera didn't have a memory card in. There really isn't that...

    Tulip Wine (includes pics)

Has anyone ever tried using Rose water? They sell it in asian supermarkets and bigger supermarkets in areas with a high population of muslims ( I think they use it for religious purposes). I don't know how 'rosey' it is.

    Bolognese Sauce

I didn't add any fats, started the carrot and onion on a really low heat and just added a small amount of white grape juice when the veggies got a little sticky.

    Aniseed Wine

Are you kidding? Star anise is exceedingly potent. I use it in asian cooking, just one 'arm' of the star and its seed crushed a bit would be overpowering (I'm guessing).

fruit juice Vs squash & cordials

I have had great success with Lidl High juice 50% Blackcurrent juice. Did it with red grape juice. Added some vanilla pod up until I racked it off. Took almost a month to ferment out dry though.

    Bolognese Sauce

So far, everything I've done has tasted great. Giddy with success and bravado and reading about other people making Tomato wine, I decided to take the next step and make a bolognese sauce wine. Pasta aficionados will argue over the 'real' bolognese recipe but I always use white wine not red...

    Cherry Polish Syrup Wine

I used the full 440ml bottle in 5ltrs. In a cider it might be nice to have the sharp raspberry come through. I fermented my wine out very dry.

My First Orange WoW & Tomato Wine

How are people making this Tomato wine, just using cartons of tomato juice? I'm wondering if it might be better to make a tomato sauce. Use fresh tomato, deseed and dry fry in a non-stick pan to bring out the natural sugars. As I type this I'm begining to think a meat free bolognese might be...

    Cherry Polish Syrup Wine

I've used the Lowicz Rasberry with lime flowers one from Tesco in two brews; a 5ltr with just RGJ and a 15ltr with RGJ and Lidl Blackcurrent. Personally I found it way overpowering in 5ltrs and only just right in the 15ltr batch.

Bottle Green Blossom Cottage Elderflower Cordial

Just a heads up really; if you have a B&M Bargains near you they are doing the Blossom Cottage Elderflower cordial (500ml) for 49p a bottle (normally about £2.50). Aside from the price, the other nice thing is the bottles are clear glass and just like a small wine bottle. I cleared out the...

    cordial wine?

Really? I wasn't aware you had to do some math to get to the ingredients. I thought if a label said ingredient 5% Blackcurrent juice, that's what is would be and not 22%. However, next time I'm in the store I shall investigate, thanks for the heads up. The Lidl stuff does contain a preservative...

    Why grape?

Do you know which is more cost effective? Using raisins or juice?

    help? Pear wine not clearing

My Goji berry wine still hasn't cleared either, I've been thinking about making some kind of inline filter using some plumbing supplies and filter coffee papers. I've heard that filtering can remove some of the complexity from a wine, but my Goji is super strong flavoured so toning that down...

    cordial wine?

I can highly recommend using Lidl High Juice 50% Blackcurrant. I did a 15ltr batch with two litres of cordial and 4 litres of red grape. Has a lovely colour. EDIT: By the way, Ribena has 5% fruit juice and is about £2.50 a bottle. The lidl stuff has 10 times the concentration and is £1.50 a...

    Why grape?

I was in a bit of a hurry to get some wines on the go a couple of weeks ago and I didn't have any cartons of either white or red grape juice. I know you're supposed to get 'vinosity' only from using grape but I didn't have any, so made a 5ltr batch with just 1ltr of cherry and 1ltr of cranberry...

    I need some body!

It is, by far the best I've done so far. I did it in a 15ltr water cooler bottle, two bottles of the blackcurrent, 4 litres of red grape and one bottle of Malina raspberry syrup. The raspberry can be very overpowering though, it's just about right in the 15lts
