    slooooow fermentation - any tips?

So my elderflower brew has been going since last year, virtually stopped over winter then started again. So about a year or thereabouts. Still bubbling - tried it to see if we should make more, it's still really sweet! So what do i do, is it normal for it to take this long? i guess it's a...

    When to stabilise wine

we have an elderberry in the shed that went to .986 - it literally sucks the moisture out of your mouth. i'll back sweeten eventually if needed once we get to drinking, for now it can mature for a year or two :)

    Solomon Grundy Bilberry wine

was the water a bit warmer? or even has the weather got a bit warmer after three days and warmed your house up? could have been the reason. No idea re the kit but let me know as i really like bilberry and would like to find an alternative to having to fly home to the parents, pick and make...

How are all your hedgerow wines doing?

We tried a bottle of damson and blackberry, and although young and quite in your face regarding alcohol, after a mouthful or two it was really nice. Pleased with the result. Not so pleased with the fact i only have two bottles - and we opened one (that was not completely full). This is a...

what do i do with gin-soaked sloes?

So emptied out the dj full of sloe gin, now i have loooads of sloes left - can i do anything (drinkable) with them? Can't be bothered with faffing around with chocolates etc. Otherwise we may have some fairly pi**ed birdies later when it goes on compost heap :)

    Beer brewer looking for advice

I am fairly new to winemaking - and only really played around with hedgerow stuff or what i can get from the garden. However i have had some inspiration from the superb wow thread on here and now have 3 on the go to see what i prefer. Very original tastings - not sure 2 cartons of juice are...

would you add citric acid to this?

I have made up a 5 ish gallon wine concoction which is probably closer to a modified wow than anything. Main juice: bilberry (7.5l) followed by: Red grape juice - 4l and about 1 1/2 l cranberry. Would you put any citric acid in this? what would it do for the flavour (and is it ok to add a...

air in bottle for long term storage?

I racked off something that didn't quite fill the last bottle - left an inch to the neck. Is this going to be ok for long term storage? It's a damson/blackberry and needs time... I didn't want to add grape juice to top up as haven't put any stabilisers etc in

    Secret Santa 2013

Thanks alanywiseman! No worries - it's nice to get someone else's feedback, just glad it didn't blow up in your fridge. We shared some with another friend the other day and i think i agree with you, it is definitely on the sweet side which takes over (and i am quite happy to drink sweet wines)...

    Red WOW

Actually thinking about it - use some blueberry juice - that would quite likely give you a deep red colour. but it would obviously give flavour too and i'm not sure how winey it would taste. Bilberry (same thing but wild version) is on offer in on of the deliver at home supermarkets - a brand...

    Champagne Ideas...

Calumscott - good point, it was probably what properly got me into brewing though, and it was very easy to make (and tasty - might have been lucky) so for a quick fix was easy enough. Maybe champagne is something to be looked at properly should i need to.

    Champagne Ideas...

The one i can't seem to find in your list is Rhubarb champagne - it's fabulous! might not be the season though but it's ready in a couple of weeks or so from natural yeasts. The longer you leave it the more alcoholic it gets. Got half the office on brewing it, you need to be around to let the...

    Red WOW

hmm what about adding something like sloe skins? or would that alter the flavour completely? or Damsons was another that went quite dark

    Secret Santa 2013

W8 was a great white wine - we cheated and had it on Christmas Eve on it's own as we were going away for Christmas Day. It smelled like peaches and was clear and crisp, and the peach came through in flavour as well. Fairly dry. We tried it both chilled and unchilled (due to forgetting to put...
