    Importance of mash temp control vs fermentation temp control

    I'd say that if you can't afford to run a fridge, don't build a herms set up. Your talking pence a week. If you want to make good beer then both are just as important. But if I had to pick, as long as you get your strike temp right for what your brewing then fermentation temp all day long.

    What you can taste there is called ACETALDEHYDE and is formed before the yeast has completely converted your sugars into alcohol. As the the guys have said it will improve but a point to note is that this can be caused by stopping fermentation to soon or stressing the yeast. Good luck with it...
