Hello everybody
I have been brewing wine for some years (mostly kits) I set up a concentrate and added the sugar but forgot to add the yeast & nutrient sachet. I then went on holiday for 2 weeks and realised when I got back. I opened the lid and there was some very small islands of fungus about 3 of them. Anyway being the eternal optimist I added the sachet. It went immediately crazy it was like a volcano. It stop after about a minute or so, so I put the lid on and it is still bubbling away after 5 days.
I have two questions if someone would kindly oblige.
Should I be worried about the fungus bit?
And what caused the volcano effect?
