"I'd be tempted to stick 25g Cascade in to steep after the boil."

What is this "steep after the boil" pls?
 
Turn off heating and add hops. Wait some 20 mins and start cooling. Some people chill wort to below 80c then add hops, this way there is no alpha acids isomerization and the bitterness is not affected.
