made about ten ag brews and never used Irish moss or gelatine in any and the beer was really good and they took a long time to clear and where well carbonated, the last brew I added Irish moss near the end of the boil and gelatine in the secondary and bottled it this morning it was crystal clear but there was no trub at all in the bottom of the secondary fv,
do you think there will be enough yeast still in the beer to kick of the carbonation in the bottles:hmm:
 
Should be fine, although the proof of the pudding is in the drinking. Did you do one or two plastic 500ml bottles so you can do the squeeze-test? It can be helpful to do so just so you can keep an eye on carb levels without having to keep opening them up.
