Best beers to brew in warmer weather

In the absence of a brew fridge, on the cards but not yet, I'm wondering what beers are going to be more forgiving to brew over the coming summer months as the temp creeps up above the 21c mark. I'm guessing it won't be the lagers but as I'm brewing kits at the moment and I believe that most lager kits come with ale yeast so how much difference will the higher temps make? Also what are the effects on a brew when temps hit 25c+?
 
I wouldn't recommend going above 21oC I used to brew in my utility room but my boiler failed and stayed on, the brew I was doing at the time ended up tasting like bananas, must admit the temp did get up to 27:eek:
Some people submerge the fv into a large tub of cool water or wrap a wet towel round it to keep temps down. If you go the towel route you'll need to be wetting it daily.

As to weather there are any kits that brew at higher temps I'm unsure but I'm guessing unlikely. Hope this helps:thumb:
 
I think the answer is to use yeasts that can cope at higher temperatures without giving out off flavours. Mauribrew Ale yeast is one. It claims to be ok up to about 32C, I've used it mid 20s successfully. And US05 is pretty tolerant up to around 25C, I believe.

I've never made a saison but I understand these are brewed at temperatures in the high 20s, using saison yeasts.

I hear your dilemma I made my first ever brew in a July month and it wasn't great and I didn't position it great.. Lesson learnt. However Saisons favour these heats and supposedly brew at 25ºc upwards. I know Youngs Saison actually reccomends above 25ºc

Exactly what I was about to say. I haven't tried a Saison before but I'm going to give one a go when the weather warms up/
 
Found this on an American forum...

"I know im not going to be overly popular for saying this, but try coopers or mauribrew ale yeast. I have brewed with them in the summer here in thailand where ambient temps are 32c with good enough results."

By Coopers yeast he must mean the Coopers ale yeast which only comes with certain kits.
