Got one of those USB temperature monitors to see what was happening temperature wise in my brews.

One of the interesting things (might be the only one) is that temperature variation is dependant on depth.

I've got an 8 gallon two handled plastic bucket that I use as a bath with a fish tank heater in it. With the probe at the bottom of the bucket the temperature variation is about .2 degrees, when it is near the surface it is about 1.25. My reasoning is that when the heater is on, the warm water rises to the surface and when it is off the surface will cool quicker.

So I'm assuming that if you have a stc-1000 temperature controller you could place the probe near the surface and it would switch the heater on and off rapidly but keep the overall temperature tight or place it at the bottom to reduce the switching but the temperature would vary more. Going to have to test it.
