cherry bomb brew day

started 10am, cleanup kitchen and prep.

4 litres chase spring heated to around 80 deg c

3 KG dried wheat extract.
500g brewing sugar

added

50 grams tettnang added once wort on a rolling boil : 20 mins boil
had to remove 1 litre of wort and gradually add back in to avoid a boil over.

topped up to 21.5L in FV

took an hour to get down to 29 deg, (didn't use enough chilled bottled water)
s-33 yeast pitched at 29 deg
og: 1056

sample tube test. YUK! :rofl: I know that a taste of the wort is not an indication of the finished product.

just had a noah knows, awesome. galaxy & amarillo are a great combination.

fermented at 20-23 deg
og: 1056 - fg 1014
5.51%

co2 purged bottling bucket
added 340 ml of cherry syrup bucket direct from room temperature bottle.
siphoned 21 litres beer on top carbonation estimated at 3.2 co2 volumes.

gave gentle stir but did not appear to mix as well as last brews priming mix.
noticed the beer in bottling wand was more pink towards the end of bottling. the tap is at the bottom of bucket so if syrup hadn't mixed it should have been more pink at the start of bottling? :wha:

still marked them as c, cc & ccc's to denote how 'pink' and possibly how much cherry syrup they had, I suspect a variety of outcomes.

plastic carb test bottle already hard.
moved bottles to less warm part of house 19-21 deg.

may open the tester this weekend as carb seems to be done already.:grin:

Just thought I should do 2x330ml plastic bottles not 1x500ml bottle, so I have 2 carbonation testers.

Sounds 'intruiging'.

What's involved in a co2 purge of bottling bucket? Presumably you're bottling direct from fv with tap/bottler? I'm interested as I've read that hop aroma is lost mainly due to oxygen exposure and I'm assuming this process would limit that?

I syphon from Fv to BB.

it displaces the air and reduces the chance of oxidization. during the transfer the beer goes from being under 1 co2 blanket to another. I don't purge the bottles of air though, but it's decanting into the BB where the risk is biggest. I'd say it's made a little difference, but not a massive amount compared to when I wasn't using it. May be more noticeable when brewing a lighter lower taste beer.
 
Update : 01/05/2015

The Cherry Bomb had Bombed!:eek: hence my rename.

no real bitterness, slight fruit tang, a slight hint of cherry, but a super beer, light and refreshing, lots of carbonation. I've made a great wheat beer, it's not what I wanted or expected but tastes light and refreshing.

This will replace my store bought erdinger and fransikaner. Will still buy weihenstephaner as that is still a unique flavor profile.
