Hi guys,

Just waiting for my stout to finish ferment.. After that I'm planning on adding 4 oz of nibs during 2nd fermentation. Now to extract most flavour how long would i have to leave it in the fv? Could i also add it in now to speed up the process?

I've read that a good way to extract flavour from cocoa nibs is to make an extract by steeping the nibs in a small amount of vodka for two or three weeks, freezing it to solidify the cocoa butter which can then be removed. The remaining liquor can be strained into the bottling bucket or keg. It's the fat in the nibs that doesn't agree with brewing beer, so you need to remove it first.
