Collected some Young Oak Leaves yesterday and started said wine. First time with Oak leaves, will try older leaves later in summer.

3 ltrs Young Oak leaves, boiled to extract Tanin (older leaves just need boiling water and steep), over 1 kg of Sugar
200g Sultanas, blended simmered and into Dj
Juice of 1 lemon, then simmered to get some zest from it and strained into dj.

When cool: 2 tsp citric acid, 1 tsp of nutrient and pectolase. Harris (18%) yeast.

Strained out sultanas after a week and added 250g sugar, fermenting fine.
 
Just took a reading at 0.992, needs a little longer as seemed to be a lot yeast in the sample tasted interesting but couldn't give final verdict until clear. Add another half tsp of pectolase just in case it wasn't yeast suspended in the sample.
 
Just bottled, wish I hadn't used extra half a camden after filtering, but could discern that it was a good wine - not for the sweet bridgade.
 
Tasted a couple of days ago, fantastic quality white white wine, passed out by 8.30pm lol :lol:
