Just brewed a lager and suffered from these.

What are they and how do I avoid them?

Now I've a brewing fridge they should settle easily but I've ruined beers before because of them.

How do you mean ruined? They just normally sink to the bottom of the FV as part of the trub and dont really effect anything (in my experience anyway as I get shed loads of trub because I chuck everything into the FV from my kettle)

Niman and Mansmasher can testify to my first brew I gave them

This is the worst I've suffered from them since my first brew. Cold crashing will cure but it's annoyed me as I've worked hard for clear beer.

I'd like to know why they happen and how to combat them. I had a rolling boil when I put my hops in.

Try a 90 min boil (and just add your hops at 60min onwards as normal). I did this today as you get better hop utilisation doing this but you'll also get a better break (according to BYOBRA) and hopefully it'll sort the problem
