I just wanted to share some feedback I received from White labs on Clarity Ferm in case its helps others.

I am looking to brew a gluten free lager for a friend who is Celica.

White labs on Clarity Ferm seamed a good solution as it reduces gluten in beer. If you are interested in the science and the results on some tests check out the following:

Clarity Ferm is added to the wort when pitching yeast so my concern on making a larger would be if it would still work at a fermenting temperature 12c. I emailed White Labs and got the following reply from their customer services team.

That temp is fine. I have attached a link to our calculato rhttp://www.whitelabs.com/other-products/wln4000-clarity-ferm . I recommend using it to make sure you get the right amount to pitch. Though it does reduce gluten, I would be cautious with someone who has celiac disease. Some with celiac can still be very sensitive to a gluten reduced beer

Sweet chestnuts are also used in gluten free although they are expensive and a PITA to prepare as I have a brew using what was 1kg reduced to 600g in the mash.:thumb:
