Evening all. What would you do with this lot?! I mean, not all at the same time probably, but what are they good for? I was given some of these so a bit unclear on their uses. My best guesses so far:
Apollo: big bittering
Wakatu: Hallertau-style aroma
Wai-ti: aroma
Motueka: aroma
So probably some IPA-style things? Any thoughts gratefully received.
 
With three out of the four being New Zealand hops, I think you should be looking at New Zealand Lager.
Edit: Yeah, sorry, I'm getting enthusiastic about this- find an NZ lager recipe, increase the malt bill a bit, but keep it clean and like a lager, and hop it like an IPA. Don't use anything heavier than carapils to bring the malt up to the level of the hops. Mmm, I can almost taste it.
Leave out the Apollo or only use it for bittering, and gently.

Apollo is a very good late hop as well. I would be looking at pale ales, IPA or as already suggested a heavily hopped lager. What quantities do you have
