Do I need to bypass the simmer stat on my Burco boiler

Hello there, I'm relatively new to home brewing & am hoping to brew my first All Grain brew this weekend.

I can see there has been similar previous posts to this but from what I can see they are all regarding a different model of Burco. If there is a post for mine, I apologise.

I have recently acquired a 30l Burco tea urn, it's a C30E model with the exposed element & doesn't appear to have an additional cut out stat like the newer ones I can see in photos.
I let it heat up about half full of water when I first got it to check it worked & it seemed to ok but I didn't get it up to a full rolling boil.

Is it necessary to disconnect or bypass the simmer stat on this model to achieve a rolling boil or is that only necessary on the later models?
Also if I do, could anyone be kind enough to explain how to rewire it please?
I would include photos but can't work out how to yet?

I'd be very greatful for any help,

Have a look at the above mate. About 3 or 4 down there's instructions on how to bypass the thermostat and temperature sensor. The pdf doc has a wiring diagram.

Thanks for that. I did try it the other night & it seemed to have a fairly good rolling boil with the lid on but I think I'll disconnect the stat to be on the safe side & make sure it keeps hot enough.
