Do you mean beer that uses elderflower for aroma or a beverage that is dominated by elderflower - like a wine or champagne?

I've just made an Elderflower beer:
Pale Malt 5,000g - mash for 90 mins
Start of Boil - 2 hours
Fuggles 19g
Goldings 19g
Challenger 19g
Last 15 mins
Goldings 20g
Irish moss 1 tsp
Dried Elderflowers 70g

I was aiming for a SG of 1.049 but got 1.062 racked at 1.010 so will be about 6.5% - a bit stronger than I would have liked ideally. It's taking a long time to clear but is definitely getting there after 3 weeks. Definitely an elderflower flavour, which I like but next time I will reduce the amount of elderflowers I add to 35 - 50g.

Interestingly all my beers are achieving a higher SG than I was aiming for and are fermenting out lower than I wanted meaning that I am producing some very strong beers indeed!
