Hi everyone
This is my first attempt at elderflower champagne, Iv made plenty of wines and beers but never champagne.
I used this recipe -
1600kg of sugar
8 lemons, rinds and juice
10 litres of water, 4 boiling 6 cold
30 elderflower heads
10g yeast

Well its been brewing since sunday afternoon, Fizzing away nicely and the airlock is bubbling away, But im due to go off to cornwall tomorrow (i live in wales so not exactly near by!) My dads biggest issue with elderflower champagne when hes made it in the past is the elderflower is always too over powering, So i have taken out the elderflower heads after 3 days of fermentation (with a sterile metal spoon) iv now put the lid back on and airlock, Will the champagne be ok in the brewing bucket while im away? When im back it would have been in the bucket for 10 days. Im planning on priming the bottles with a little bit of sugar when i bottle the drink when im home, so it will hopefully get fizzy again. Thanks
