I am thinking of using honey in a brew using a kit.

Was thinking of using Coopers Canadian Blonde with light spray malt and honey.

Unsure of how much honey to put in ~ any advise on this would be great.

I'm guessing you're looking for some honey flavor. I've had good luck using about 1 kg of honey at flameout in mine, but I also use 227 grams of honey malt. That's what I use in my honey wheat which is quite similar to Blue Moon's honey wheat.

Do not add the honey during the boil as it kills what flavor you will get, which isn't exactly like honey, but is similar. It also depends on the type of honey you use. Some are more flavorful.

I've also added my honey a week after fermentation began, which worked well too, but I prefer flameout as I can accurately get an OG reading.

You can also use honey to prime with.

Using honey you may not need the spray malt unless you are looking for high gravity. I use Brewtoad and generally get a few additional tenths of ABV than it calculates when using honey.
