Hi

Ive just purchased a 25ltr carton of Light Lme from Brew UK.

Would anybody kindly tell me the best easy brew which doesn't take to long to condition to make please.

I have only knowledge of kit beers no all grain or any BIAB, I would be boiling on a gas cooker in the house as well.

It's got to be a SMASH. Method depends on how big your pot is, but how about...

HOME BREW RECIPE:
Title: Amarillo Smash
Brew Method: Extract
Style Name:IPA
Boil Time: 60 min
Batch Size: 23 liters (fermentor volume)
Boil Size: 18 liters
STATS:
Original Gravity: 1.044
Final Gravity: 1.010
ABV 4.52%
IBU 48.58
FERMENTABLES
3.5 kg - Liquid Malt Extract - Amber (100%)
HOPS:
20 g - Magnum, Type: Pellet, AA: 15, Use: Boil for 60 min, IBU: 31.14
25 g - Amarillo, Type: Pellet, AA: 8.6, Use: Boil for 10 min, IBU: 8.09
25 g - Amarillo, Type: Pellet, AA: 8.6, Use: Whirlpool for 30 min,IBU: 9.35
YEAST:
What have you got? It doesn't matter.
Fermentation Temp: 20 C

Put about 14-15 litres of water in your pot, add 3.5kg of LME, dissolve-in whilst bringing to the boil.
Once boiling add Magnum hops and start timer, after 50 mins add 25g Amarillo, after 60 min turn off heat, add cold water to reduce temp to 80 degrees and add 25g Amarillo, steep 20-30 mins, decant to FV.
Add cold water to 23 litres. Reduce temp to 20 degrees, Add yeast.

You could swap Amarillo for any hop that you like, cascade would be good, citra, simcoe is nice, any combination, the world is your oyster.
Each extra 0.5kg LME will add about 0.6% alcohol, adjust to your liking.
If your pot is smaller just fill it for the boil, and up the dilution water to make up the volume, it'll play with the bitterness but not too much.
You can get the hops from CML in small quantities without extra postage.
Next brew you can steep some grains to do whatever recipe you want, get a biab bag to fit your pot in between times.
There's lots of threads about biab and smash's on here if you do a search, I've had wine so I can't be mithered!

Personally, I would use the above LME weight and the methods but I would use:
  • East Kent Goldings Leaf as the hops:
    • 25g for 60 minutes as the Bittering Hops.
    • 25g for 30 minutes as the Aroma Hops.
  • Wilco Ale Yeast (sprinkled over the top of the wort when it's cooled to less than 21*C)

LME is one of the most "sticky" substances known to mankind. With 25kg of the stuff my advice is to treat it with the utmost respect!
