I am wanting to put a brew on tomorrow but know I have to head out for a couple of hours so was wondering, if I set the mash away (grainfather), will it do any harm if I mash for say 3 hours rather than one?
 
I would give it a stir just before you leave. Should be fine.
 
Overnight mashes look to be very interesting. Does it serve well to insilain as well as you can and more nimise the temp drop? Or is the density of the average 5 gallon mash enough to not be a worry given an ambient air temp of say 15c?
