Thought I’d share this recipe of something I’ve brewed recently. Tried to recreate Kipling by Thornbridge!
23 litre batch.
Water treatment - 10 grams 5.2 stabiliser 10 grams calcium chloride 5 grams calcium sulfate (water chemistry is my weakest area!)
Grains -
5kg muntons extra pale malt. Mash was at 66c
60 minute boil -
10 grams Apollo hops at 60 minutes.
Protofloc at 15 minutes.
50 grams Nelson 30 minutes hop stand at 65c. Stirred the wort every 10 minutes.
Pitched a packet of us-05 (didn’t rehydrate) fermented low - 17c, it’s a nice steady temp in my understairs cupboard.
Dry hopped at 4 days with 50 grams Nelson.
OG was 1050, FG was 1010.
9 days in the bottle and it’s tasting fantastic! Nice and fruity, slightly sour grape and gooseberry notes coming through. Nelson is a great hop in a stripped down simple pale ale IMO. I’ve tried it in NEIPAs etc and it’s just not the same. For me this hop shines in dry and simple ales where it plays centre stage and the yeast doesn’t interfere.
