Use any "peat malt" in place of "Chateau Whiskey Malt"? Why not. The Chateau stuff is only their version of peat malt. Careful with it though, it might taste nasty in beer (Phenolic ... with a capital "P"), but there are people who use it (especially some US Americans who believe Scottish folk make a habit of brewing beer out of the rancid stuff), and they actually think it tastes okay.
