the top of the actual brew is about 3 inch from the rim and was starting to get into the airlock so now ive took airlock of and put a balloon on with pin prick . will this be ok ?

Well it is but you should keep a bigger gap in the early days, say at 4 litres and then top up when things are quieter.
What you could do to avoid a mess: put the airlock back on and then put FV into a black bag to contain any spillage

From the post it reads that you started the whole lot off in the 5 litre water bottle. The first ferment is often the most vigorous and so produces froth/foam.

What I do, and I believe most, is to throw the lot into a 2 gallon bucket and do the initial ferment in this. I cover it with a tea towel and stir twice a day.

When the initial fermentation hs died down a bit, 4-5 days then it gets transferred into a DJ, or suitable container to fit with an airlock. At this transferal it also goes through a sieve to catch the fruit pulp.

I'm doing the wine with cordial so no need to sieve it but lesson learnt as in not to fill
So high next time and maybe I'll invest in a bucket . I have put the propper airlock on now and stood it in a tuppaware tub to catch the overflow of throth .
