Wilkinsons chardonnay issue? Hint of vinegar?

So I added the filings etc to make it go clear 5 days ago. It's still a strong yellow colour but I can read the instructions through the demijohn clearly so figured it's good to go.

Opened her up and had a sniff. Hint of vinegar. That's not good!?

In goes the hydrometer and it sinks low, above the top reading of 990. What does this mean?

Everything was sterilised! I read that it could be bacteria? Causing the acetic acid? I don't have any campden tablets to hand and am away from home for the next four days. Can ask a family member to do it if it's necessary?

Dripped some of it on my hand off the hydrometer and tasted it. It tastes like wine, but didn't taste very strong. No real hint of vinegar though?

sounds fairly normal, wouldnt worry too much, until it tastes vinegary its not a problem. my recent bathes didnt taste or smell right till i had them stabilised and sweetned

just follow the std instructions, ie rack (with campden), stabilise and sweeten
