Currently about to use M76 yeast for the first time to make a lager. Modified a fridge yesterday to keep my fermentation at 10 degrees. It says the yeast should be 8-14 degrees in fermentation, but what about pitching temp? I was thinking of pitching around 18 degrees then after about 6 hours turn the new fridge set up on so it slowly brings the temp down... And should I use 2 packets in 23L.. Thanks in advance
 
I would think the general advice would be to pitch 2 packets but there are no instructions on the web site to do that it does say 1 packet will do 23 ltrs between 8-14 degrees. Maybe pitch at the top end of the advised temp then bring down if you want to
