    I suspect their previous US Pale Ale (of which I used my last packet 3 weeks ago) has been replaced by 'Ale Yeast' and they are now selling US as No. 5 (US 05 and all that) for more money. I wonder if their 'Ale Yeast' is the same as the one they used to call 'US Pale Ale'?

    So an update on the Coopers AusPA made up with 500g Light DME and 750g of Golden Syrup fermented with Høg Norsk beast-yeast and dry hopped with 25g Cascade. Bottled today... 🤣 have I made NEIPA??? Colour of carrot juice and cloudy as hell.😂 FG was 1010 after 2 weeks. Tastes good.

    My second "light summer ale" is on the go. I mixed it up while the wife was at work and the toddler was asleep. Time is of the essence. I also get the chance to try out the new Høg norsk yeast.

    Maybe get a basic lager/pilsner kit and use some medium malt extract (or just light dme) and California Common yeast. Crossmyloof have some good dry yeast selling cheap but last time I looked Cali common was out of stock.

    I normally do my stout kits (Coopers Irish and Coopers Stout) with medium or dark malt. IPA would be good with light malt. 500/500 ratio sounds good

    Sounds good. I have an AuPA waiting to go in with also 500g dme and 500g unrefined sugar... and lots of Cascade pellets. Going to try the Høg Norsk yeast from Crossmyloof.
