Brewnaldo why use Kentucky for a Kolsch. Just asking cause I really love CML Kolsch yeast for hybrid lagers. Do you think its better then Kolsch yeast for what you want to do?
Also they no longer sell California Common (I still have 1 pack left) but the 'Kentucky Common' is now available... is...
I suspect their previous US Pale Ale (of which I used my last packet 3 weeks ago) has been replaced by 'Ale Yeast' and they are now selling US as No. 5 (US 05 and all that) for more money.
I wonder if their 'Ale Yeast' is the same as the one they used to call 'US Pale Ale'?
Hi Druss, I have never brewed a mead but am interested in doing something akin to "table mead" which I believe is beer strength.
How do you stop the ferment when you reach the wanted abv? Does it end up sweet?
Do you drink it carbed or flat?
I have heard there are specific sweet mead...
Coopers AusPA + 500g DME + 750g Golden Syrup + Høg Norsk yeast + 23L Camden treated water
2 weeks primary
25g Cascade hops on day 10
Bottled and primed 15g sugar per 2L bottle
Been bottled for more than 2 weeks. Very well carbonated and refreshing. Very lagerish but the hops are shining in...
So an update on the Coopers AusPA made up with 500g Light DME and 750g of Golden Syrup fermented with Høg Norsk beast-yeast and dry hopped with 25g Cascade.
Bottled today... 🤣 have I made NEIPA???
Colour of carrot juice and cloudy as hell.😂
FG was 1010 after 2 weeks. Tastes good.
My second "light summer ale" is on the go. I mixed it up while the wife was at work and the toddler was asleep. Time is of the essence.
I also get the chance to try out the new Høg norsk yeast.
So an update on the Coopers draught I did earlier. It's only been in the keg a week. Still needs more carbing. I can definitely taste the hops. Dry hopping makes a massive difference.
As for the 400g of unrefined cane sugar... I can't taste any off flavours and the beer is not too heavy as it...
Maybe get a basic lager/pilsner kit and use some medium malt extract (or just light dme) and California Common yeast.
Crossmyloof have some good dry yeast selling cheap but last time I looked Cali common was out of stock.
Sounds good. I have an AuPA waiting to go in with also 500g dme and 500g unrefined sugar... and lots of Cascade pellets. Going to try the Høg Norsk yeast from Crossmyloof.
