Hiya gang, I just put 50 grams of Young's powder wine tannin in 100 LTRs of elderflower champagne, and the dang thing as frothed right up, I started the whole thing off yesterday, and it's quite warm in the house, but only put the tannin in today', so it must have started to ferment rapidly...
