    I'm on the Chocolate Cherry Imperial Milk Stout tonight. They've been bottling conditioning for the past 10 months and the flavours are really starting to meld. I reckon it's about 8.9%, so a cold night like tonight seemed like a good time pop one open.

    German Pils. I made it to propagate yeast for a Baltic Porter which is happily conditioning at the moment. For the Pils, it's Pilsner malt, a bit of Amber, Saaz, and W-34/70 yeast. 3.9% ABV and lagered for 2 1/2 weeks. Clear and easy drinking.

    Stuck Fermentation

    Hmmmm.... S-04 makes a pretty tight yeast cake. Rousing it is the next step if you didn't do it already. After that, I'd wait a few days or more, take the gravity again, and if there's no movement I'd say it's done.

    Brewed a Lager today. Sort of a German Pilsner with a bit of Amber Malt. I used 4kg of Bohemian Pilsner and 0.5kg Amber. Hopped to 27 IBU with Saaz. Using Saflager W-34/70. OG 1.042. Expecting it to be around 4.5% ABV. Will be re-using the yeast cake for a Baltic Porter.

    Carbonating temp/pressure

    If the beer was cold crashed in an unpressurised container after being at fermenting temp, then fermenting temp (or thereabouts) should be used to determine the amount of residual CO2.

    It all depends on what you're looking for. IMHO, your recipe should work, but for the Mild's I make I use plenty of Crystal Malt and mash higher (68°C). You may want to consider doing one, the other, or both. Also, Mild's shouldn't be about hops, so I'd get rid of the late additions if you...

    Drinking the last of my Extreme Dark Mild @ 2.8% ABV. Tastes great, but I think I'll make it a bit stronger next time.

    I've just found out I've been calculating ABV wrong all these years!

    The HMRC formula using the multipliers doesn't seem to be consistent. I just plugged-in some number of beers I made and some come out with higher ABV, some lower.
