great advice but since you need to froth it around to oxygenate it, that's an opportunity for the flies to get in that's hard to stop. unless i skip the oxygenation.
BTW, the yeast started off after about an hour, it always seems to get started quick for me and i don't pre hydrate or anything.
well its always summer here in Thailand and risk of infection is always a possibility. i guess that's what happened. i keep my FV in a big ice box and add ice each day. i try keep the inside of the ice box clean and bug free but there's only so much you can do.
i made my second extract kit recently (first one turned out great) but this one, tastes like vinegar. i had it in the FV for 3 weeks and i could tell it was bad when i bottled it, but i wanted to give it a bit more time anyhow. so 2 weeks after bottling i tried again and it's still undrinkable...
not currently. i used to have a bottle of burton salts but i can't find anything in my recent move, so i havn't bothered.

i've been brewing with RO water, which is pretty much free of all "impurities" like gypsum etc.
i know commercial breweries like to make a big deal about their water, like Burtonizing https://en.wikipedia.org/wiki/Brewing_methods#Burtonisation or water from the Colorado Rockies, etc

i've just bottled my Muntons Gold Old English bitter kit, not sure if that's the same as the OP but i think its close.
its only 13 days old but i'm already drinking it, it tastes great to me though obviously flat. can't wait to see how the taste develops as it ages.
is it LME or DME? i read somewhere that DME lasts longer than LME which is surprising to me, i would think a can is a better storage device than a plastic bag.
i made a batch a while ago from some 1 year old DME which had gone rock hard in the bag. it still worked ok but took a lot of boiling...
