    Possibly. I don't know the chemistry that accounts for 'body'. It could be that the ethanol and carboxylic acids are both very soluble in water, whereas esters are much less so. That would certainly change the 'feel' of the solution.

    That's fine. If you've added 200g of sugar, then you'll need the 500g of spraymalt and a little extra of something, perhaps some brown sugar or a little more spraymalt.

    It's fine to add the extra sugar, but you won't be able to calculate the alcohol content at the end, although you can probably estimate it. Knowing the ABV is nice but not essential, but if you don't add the sugar or malt or whatever, you'll have a thin and tasteless beer that won't be above 1%...
