    A rubber band around the clip might do it... Or some insulation tape under the sliding toothed section, for a tighter engagement. Worth a try, anyway.

    Similar here but with the addition of a handful of raisins, a pinch of chilli and a couple of cloves (for a five gallon batch). I prefer dry so I've stuck with EC-1118 champagne yeast. I got started via the thread I linked to above and it's become a firm favourite with some. Others hate it...

    Relax. I would not bother topping up. A week or four post fermentation is far more likely to help than harm.

    Speaking as a cider novice... Basically ok but adding pectolase (1tsp per gallon) in Step 1 may help your cider to clear a little faster, if you care about such things. Adding sugar can equate to subtracting flavour. Consider accepting the OG "as is" rather than pushing for a particular value...
