    Adding brandy to beer

I normally add about 500ml of rum to my coconut rum stout at bottling time, the taste is quite powerful initially but settles into the background nicely after about 8 weeks

Milk Stout - Help and advice needed

Just racked my Christmas coconut rum milk stout off into a pressure barrel to settle before bottling. Fermentation went off like a rocket but has taken 4 weeks to complete, last year's only took 10 days and the temperatures are about the same!

    What are you drinking tonight.

Tonight I will be drinking rebellion brewery's IPA carefully recanted from the 9 gallon barrel at last weekend's wedding. Put into a king keg with Co2 it's been good all week, there was no way I was leaving what turned out to be 4 gallons at the venue, especially as they wanted me to leave it so...

    B&M kits

Tried the real ale out of the pressure barrel,it's a little lighter than I expected but pleasantly hoppy ,a lovely summer session beer

    Kit tinkering experiment

Personally I'd add some dried malt extract, this will add extra fermentables but will also radically improve the body,as will lactose ,but this will also sweeten the finished product. As said previously any oats would need to be mashed and would also add extra fermentables as well as...

    B&M kits

Just put my real ale into the PB primed with 85 g dextrose, smells good and is reasonably clear despite only starting 10 days ago. The warm weather has speeded up fermentation and I have no means of cooling, the mead I put on 2 days ago ,which I assumed to be a slow starter , is bubbling through...

    B&M kits

Bought 2 of the real ale kits and made up to 20 litres, was off like a rocket in less than 3 hrs with a 3 inch krausen ,if it's good I'm going back for more. Have brewed this to the instructions on the kit but mat well be tweaking after I've assessed the result

    Coconut rum milk stout

Yes that was a lot of fermentables,am planning on keeping a fair percentage of this for a while,I have no doubt it will get better with time

    Coconut rum milk stout

Might try this,am thinking some toasted oak chips next time as well for a more matured flavour

    Coconut rum milk stout

Drinking this now and its really smooth and mellow with a great mouthfeel,I eventually went with 300 ml of dark navy rum,and was a bit concerned it might be too overpowering but the flavour is quite subtle with the coconut there in the background. I will definitely be making this one again.

What labels tell us about a brewery

The Guinness milk stout is nice too,and the labels are just as easy to remove

    Manky bottles

I only give away homebrew in re cycled crown capped bottles, due to dirty returns of my swing tops or worse still no return at all. I do have one friend though who occasionally gets a swing top from me ,but then he also supplies me with the occasional swing top or amber beer bottle if I'm short...

    Coconut rum milk stout

Now down to 1.005 so racked off into pressure barrel with added 500g lactose, will be leaving to clear for 10 days before adding rum and priming, 10 liter s into easy kegs and the remainder Into bottles, despite the quantity of coconut only has a slight background hint but I am reluctant to add...
