    Best not to do that with just any yeast. The yeast may be a different strain than the one they used and therefor gobble up some extra sugars ;), making your bottles go kaboom! Better to use special bottling yeast! For instance SafAle F-2.

    There is also a downside. The more you learn to taste off flavours, the more you will detect them. Thats a very useful skill to improve your beers, but also diminishes your pleasure ^^

    The taste usually. Unless of course you mean you strip the golden ale of any hop varieties that are common for it and add typical IPA hops. Then there's no difference. But that's like saying: "Whats the difference between a "porter" and a golden ale with roasted malt chucked in?"

    Better heat to above mash temperature. The grain lowers the temperature of the water.

    This also makes your wort less clear because you are disrupting the filter (the husks! not! the big filter, but the husks!). Wether or not that matters is debatable.
