Would someone give me some advice on brewing stronger beers, I know I've just started and I'm still in the 'Kit Brewing Stage' but I really like the taste of some of the Belgium Beer kits that are available. The question is and I think I've seen this somewhere, how do I make the beers stronger...

When the beer starts to ferment I am left with a deposit of what appears to be yeast stuck to the top and sides of my barrel, what do I do with it? Scrape it back into brew or just leave it? Newby Mike
