    Thanks for the responses. I didn't think to use a hydrometer - D'oh! I assumed that it wasn't fermenting as there were no tell-tale bubbles rising to the surface. I'll check with a hydrometer tonight when I get back home.

    Well, the ginger beer was not a success. :( It's drinkable but has a harsh bitterness to the taste which is off-putting. I shall have to go back to the drawing board. Ho hum!

    "Having a go"? It never occurred to me. In the past when I've tried making cider, it has always fermented out to be mouth-squinchingly dry and I wanted to avoid that if I could.
