    Agreed with all of the above. Esters are generally caused by yeast stress: temperature is a big factor, but in your case my money would be on nutrient deficiency. The massive amount of yeast in there by your third brew are all going to be trying to actively grow as well as just chewing through...

    Sounds like a plan - and that’s precisely the setup I use for adding finings so it’s all good to go! Got the inkbird and heat mat set to 23C so will see if things turn around in the next 24 hours then will hit it with some DAP and vits.

    Some are more sensitive to pressure than others. I’ve not had any trouble with m44 in the past, but some, like the DuPont Saison strain, are famous for their pressure stalls.

    So I’ve not seen this before with this yeast, but looks like my fermentation is stalling… I’ll push the temperature up to 23 C and drop the pressure down to .5 ba which should get it going again, but has anyone else see this with M44?

    To be honest I prep my starter culture growth medium more out of habit than anything else, but freezer space is also at a premium!
