    I put my fruit wine next to the boiler in the kitchen, which is quite warm. My books say if it does not start fermenting in the first few days, then add more yeast as you may have killed the first lot, but I would try some yeast nutrient first just to see. My plum wine is still in the bucket...

    Plum wine

    Did you steep the fruit in boiling water? I have done 2 batches, using 2 different recipes, and they are both cloudy :( I have been told many different ways to stop it getting cloudy, but my dad is adamant the only time he had not peeled the plums he has cloudy wine. I am just confused now.

    Oh, I have no idea, I just assumed when the water is pushed right up one side of the airlock, that its still producing gas so still fermenting............ I have only done wines, and my plum have started to ferment again as its warmed up over the last week or so.

    How long does elderflower champagne keep for?

    Tried my first bottle yesterday as it is now crystal clear, was very very nice, no idea of the alcohol level, but did trip 3 times going to bed after 1/2 litre of the stuff. Put the rest away for xmas and next spring.
