Hops moving around in a vigerous boil will give a more efficient isomerisation than when they are in a bag. If possible it is better to let them boil free and to use a hop filter or strain the wort.

Also noticed how much LME you were using. If you really are looking at doing a 25ltr brew length then the required amount of LME is 3170 grms - or about 2.25 litres.

The big lamp bitter recipe doesn't call for any sugar - just pale malt (in this case LME) and some crystal malt to steep.
Yeast won't be added until you have completed the boil and let the wort cool down to pitching temperatures.

I think longer mash times can lead to thinner bodied beers so it probably goes hand in hand with style of beer and the temperature of the mash being used.

I think they use Muntons yeast in the Woodfordes kit. Personally I find this yeast has quite a large impact on the taste of the beer - you'd be suprised if you brewed the same kit with a more neutral yeast like Nottingham or S-04. I prefer the cleaner taste from Nottingham and my Dad has brewed...
