    Further to my last reply; I've brewed BK again, this time with 100% NZ Cascade. What a beer! Took it to a start-up commercial brewery where they asked me for the recipe!

    Speeding up bottle sanitisation help !!!!

    Just chucked 20l of beer made last week: acidic and slightly whiffy. Wondering whether the infection was in the fementer which I may have used to soak the bottles in that got the infection earlier.     Short, clean nails and then plunge hands into the StarSan for 20 secs rub into the hands (friction's good for killing bacteria, I believe), job's a good'un. This process (with Iodophor) used by James from Basic Brewing Radio and he doesn't have trouble either.
