    Blackberry Wine Booboo

Hi, I'm looking for a bit of advise as I've messed up somewhat? I've just made up a 5 gallon batch of blackberry wine, however I've added far to much water for the initial fermentation leaving it only 2 inches from the top of my bucket. I know from before that as soon as I add the yeast and...

Spare DJ - What shall it be?

I've got a spare clean DJ in the kitchen just waiting to put to use. What should I make? I'm sort of toying with either Coffee or Tea & Raisin but I've also got a bag of last years green beans in the freezer that are probably no longer edible. Green Bean Wine? Sugestions anyone :hmm:

    Hazy Pear Wine

I've got some pear wine that is just refusing to clear. A lot of sediment has dropped out and it has been racked twice and still has a persistant haze. The pears were boiled quite hard at the start and a teaspoon of pectolase was added before fermentation. Suggestions anyone?

    Beer Enhancers and Priming Bottles

Hi, I've decided to turn my hand to making a Cooper' Australian Pale Ale from a kit. This'll be the first beer (not counting ginger beer!) I've ever made and I've read that I need to use Cooper's Beer Enhancer instead of sugar, as it gives it a better taste. Is this necessary, or will I get...

    Clearing wines

Where is the best place to put wine to clear and can it be too cold? I have put mine in the garage and when I checked today, they were covered in condensation and really cold to the touch, is this bad?

    A wine making calendar

I've just aquired a further 14 DJs expanding my collection to 19. So I now want to plan ahead and utilise them all throughout the year. I'm a big fan of using what nature provides when it's in season, so has anybody got any suggestions for a what wines to make and when. Here's my ideas (updated...

    When to use Potassium Sorbate?

When would be the correct time to use Potassium Sorbate? I intended to make some sweet elderberry wine but it has fermented down to .990. The original brew stared off the scale of my hydrometer, so >>1.120, and I am using Youngs Super Yeast Compound. I have been getting my recipes from...

    Mysterious green blobs

I have just made a batch of elderberry and after straining the mash into 2 demijohns, i have found green, oil-like blobs floating on the surface of the liquid. I have syphoned off the liquid into fresh demijohns leaving these blobs behind and it's all fermenting nicely with no re-occurrence of...
