    Ginger cider started!

    I also tried making a ginger beer (similar to your recipe) with too much sugar.. well it had a SG of 1.060 and FG of 0.992 so at around 9% I guess it transferred into a cider. It smelt like **** but I bottled it anyway and tried a bottle today after 3 weeks of conditioning... and yep tasted...

    Mixed a Coopers Draught on 8/9/11. OG was 1.040 as per norm. Took a reading on 13/9/11, was at 1.020. However it doesn't seem to be fermenting anymore and the reading now on 18/9/11 is still at 1.020. I'm sure its safe to bottle but seems a bit pointless as the alcohol will only be around 2.7%...

    I'm not sure as brewers we have the privilege to just stop fermentation as we please, unless you boil and cold crash or use camden pills to kill the yeast. If you were to bottle early I assumed it would just keep fermenting on the remaining sugar and possibly explode your bottle or supercharge...
