Burnt Caramel Aroma á la Day of the Dead Amber Ale

If anyone is unfamiliar with the Day of the Dead Mexican beer range I implore you to sample them, they are awesome! On to my question; the amber ale has an incredibly powerful burnt caramel aroma, would I be correct in assuming this would come from a dark caramel malt? I've used cara malts...

Plastic tap on a DIY mash tun/boiler

So, I've got myself a 60l blue barrel and a couple of value kettles, with the intention of installing the elements into the bottom to make a boiler. I will then insulate it, so that, in conjunction with a bag I can use it as a mash tun and boiler. My question is this: is there any issue with...

    The Kaiser

So here's what I am brewing as we speak. It is an Imperial Stout brewed with Vienna rather than Pale Malt (mainly because that's what I had in stock rather than any inclination to experiment - that said I am interested...),I have scaled up the recipe here from my 1 gallon due to limited...

So, I started this on 25th September, decided to add 1.5kg Dark LME, give it a bit of depth, plus 50g of Columbus in a hop tea (I does like 'em hoppy!) Dutifully stood the bag in boiled water to soften up, only to realise: Disaster!! I hadn't removed the yeast packet from the bottom. What to...

Strawberry Wine secondary Fermentation - or not...?

I made up a gallon of strawberry wine in a demijohn which fermented like crazy for a couple of weeks then slowed for a couple, until after 5 weeks it had stopped and cleared to crystal. As per the instructions in my ancient countrywines book, I racked into a clean demijohn a week ago and fitted...

Smaller batch in a large FV...?

I am looking at doing a Brewferm kit, (probably a Diabolo or Grand Cru) my question is this; is there any issues involved with brewing a smaller (9l) batch in a 25l FV, as this is the only one I have? Or do I just double it up.... ;)

Hi all, New to brewing, been perusing the forum for a while whilst setting myself up, just finished bottling my first brew, a Coopers Irish Stout Kit. Now just struggling to find somewhere cooler to condition it for a while. Anywho, good to meet you all. Carl
