Hi,
I'm totally new to brewing and never made cider or wine before. We have 3 grape vines that produced hundreds of grapes so we've started making wine with them (or trying to!). Is it a problem to fill a demijohn by half or 2 thirds? I've got a big glass demijohn that I want to use but won't fill it with the juice, alternatively I could use gallon demijohns but may need to buy more of them! I have read that it is not good to have a gap as it will oxidize the wine and turn it to vinegar. But, if I need to make up the solution to the neck of the demijohn then do I add water or bought wine? Won't this dilute the solution and then my alcohol content will be all wrong!?
