I drop the hop hag in shortly after Flameout and steep it for 30 minutes. Today, during the 30 minute steeping time, the wort temperature dropped to 75*C. Before cooling, I remove the hops and wring the bag out.
I can't say that I've noticed a great deal of increased bittering but I can definitely taste the presence of hops more than when I used to add them for the last 10 minutes of the boil.
