Decided to do another experiment brew based on the Dave Law's Saison in ‘Ultimate Homebrew Book'
Pretty much kept to it except changed the hops to Citra - well okay didnt really keep to it at all very much but hey it was the inspiration for it :lol:

0.25 kg Caramel/Crystal Malt - 20L (39.4 EBC)
0.25 kg Wheat, Torrified (3.3 EBC)

Hops

10.00 g Citra [14.80 %] - Boil 30.0 min 10.8 IBUs
10.00 g Citra [14.80 %] - Boil 20.0 min 8.5 IBUs
10.00 g Citra [14.80 %] - Boil 10.0 min 5.1 IBUs
30.00 g Citra [14.80 %] - Aroma Steep 20.0 min 0.0 IBUs

Adjuncts

20g Coriander Seed (Boil 10.0 mins)
10 Anise, Star (Boil 10.0 mins)
2 Orange Peel, Sweet (Boil 10.0 mins)
1 Lemon zest (Boil 10.0 mins)
10g cardamon pods crushed (Boil 10mins)
1.00 tsp Black pepper corns crushed (Boil 5.0 mins)

1.00 Items Whirlfloc Tablet (Boil 15.0 mins)

1.0 pkg Saison (Brewtek #CL-0380)

Boil started

New cooler coil – just made it that morning – knew I would need it given the weather we had !

The bits in the bottom when the bit I want is out

Trying to get it cool enough to pitch the yeast – got there in the end


Ended up with 21lt to bottle - pre boil gravity was 1042, post boil was 1053, ended up as 1006 to bottle giving 6.2%abv, a bit high but should be nice.
Its in the bottle now and clearing down nicely – quick taste while bottling was very nice, I think the citra hops will work well with the spices etc. Time will tell :)
 
bottled this on 25th - moved out to garage a bit late but had to try a bottle - nice - very nice bodes well for a mature beer in a month or two :thumb: lots of fruity scent, mixed fruity / spicy taste with a hoppy background, got to love Citra - all in all well worth the experiment
