I've been making small BIAB brews and the Brewsmith steps call for a 7-10 minute mash out. I'm just wondering, how important a step is that? The reason I ask is because I've just forgotten to do it, for the second batch in a row!!
 
Heating to over 76C is supposed to denature the enzymes so stopping the mashing process. It's a good opportunity to give the mash a stir with the hope of getting more sugars into solution. Sparging is an even better way to get more sugar out with BIAB.
