Changing Hefeweis wort into a bitter .

Hello all .

Brewed a hefe yesterday and let it cool overnight . OG 1.054 . Went to pitch my t 58 yeast but it smelled and tasted off so I pitched the 1.054 wort onto to safalw S04 I had just kegged .

I was thinking if I add more bittering hops I can make it more like an ESB. How would I go about this ? Make a hop tea with sufficient addition to take it to say 30 IBU ( presently 15 IBU) then tip into the fermenter once cooled? Or just leave as it without anything else added .

Well, I've decided that I'll add 10g or so EKG as dry hop . The cake I pitched the wort onto was formerly a stout made with S-04. Maybe that will add some additional bitterness. Will just have to see how it turns out . I will report back at bottling time as to the palatability of the resulting concoction
